I understand the current situation is that your 365 users are not able to add events to their channel calendars, and that this issue seems to be related to the "New Teams" client.
From my experience, please suggest that the user either updates their Teams app to the latest version or uses the web version to create the event. I have tested the Teams channel calendar on both the Outlook web and desktop applications, and I encountered no issues or errors.
