First, Surface Go 3 for consumer comes with Windows 11 Home preinstalled. Since you have Windows 10 Pro on your Surface Go 3, I assume that this was a Surface Go 3 for Business (Buy Surface Go 3 for Business with 10.5" Touchscreen & Windows 11 Pro - Microsoft Store) where an option for Windows 10 Pro preinstalled is available. Is the device still connected to your work domain or managed by your company?
Upgrade to Windows 11 Pro should be offered on this device through Windows Updates since the device is compatible with Windows 11. Kindly check first with your IT administrator if upgrade to Windows 11 is blocked. If not, try first to run the PC Health Check app on the device to see the device eligibility for Windows 11. Once the PC Health Check app shows that your Surface is ready for Windows 11, Go to Windows Settings > Updates & Security then check for updates and see if the upgrade to Windows 11 is offered.
